This word always makes me laugh! Zucchini noodles = zoodles 😄
I actually call them courgettes, so perhaps mine should be called coudles?! Whatever you want to call them, this is a light, healthy, easy, and delicious dish you can prepare in many different ways. You just need a “zoodler” 😄 like mine, no need for any electric device. You cut the courgettes into spirals, then stir-fry or simmer them for a few minutes with whatever ingredients you like. Make sure you don’t overcook them!
For the first recipe in the pictures, you sauté them in olive oil with lots of fresh sage, lots of garlic, and a handful of pine kernels.
In the last two pictures, I made a curry sauce frying up a big, finely chopped onion with salt and Curry Madras, then added a little bit of water and a lot of coconut milk. After a couple of minutes I put the raw courgettes into it and let it all simmer for another 4 or 5 minutes. You can decorate it with some fried garlic and freshly grated turmeric.
You can also cook them on their own, stir-fried or even boiled very quickly, and then add fresh ingredients to them like tomatoes and fresh herbs, or guacamole, or any sauce you would put on normal noodles.
